Vegetarian Chicken Salad - Goi Ga Chay

This mock chicken salad dish is made from wheat tofu (also called wheat gluten or seitan), so it's vegetarian. In Vietnam, roughly 85% of the people are practicing Buddhists, mostly they eat vegetarian "An Chay" 2 times a month: on the 1st and 15th day of a lunar month.

  • Use kitchen towel to remove excess water in the wheat tofu. Then pan-fry until golden brown on all sides. Place on kitchen towel to remove the excess oil. Set aside to cool.
  • Use the same oil to fry the sliced leek until quite golden. Then turn off the heat. You can drain off the excess oil.
  • Shred the pan-fried wheat tofu along the fiber grain into small chunks, like shredding chicken.
  • To make the dressing, mix together the lime juice, sugar, salt, and mushroom seasoning. Stir well to dissolve.
  • Toss the shredded wheat tofu with half of the dressing. Then add the fried leek, Vietnamese mint and lime leaves. Pour in the rest of the dressing and mix well.
  • Transfer to a serving plate. Sprinkle some more pepper on top and serve with rice.
