Recipe: Taro Pudding - Chè khoai môn

  • Yield: 6-8 Servings

  • Steam the taro for about 10-15 minutes until they are soft. (You can also place the taro in a bowl, cover and microwave for about 5 minutes.)
  • Then bring another saucepan of 1 liter (4 cups) of water to a boil and then add the glutinous rice. Give it a good stir and bring to a boil again. Then lower the heat to medium and cook for about 5 minutes, stirring occasionally.
  • After boiling for 5 minutes just cover the pot and turn off the heat. Leave it there for 1 or 2 hours. When you come back in an hour, the rice has softened and expanded a lot. Bring it to a boil again and simmer on low heat for another 5 or 10 minutes. Add in the steamed taro.
  • Add a few drops of pandan extract. Add 3/4 cups of sugar. Stir well and simmer on low heat for about 15 minutes. To milden the taste of sugar, add a water teaspoon of salt, and some vanilla if you like.
  • You can serve the pudding hot or chilled with some coconut sauce on top.
