Recipe: Sweet and sour fried wonton - Hoành thánh chiên sốt chua ngọt

    • Process garlic, shallot, ginger into a food processor finely, then come the meat and the prawns. Add 1 tbsp of tapioca/corn starch, 1 tbsp vegetable oil, 1 tbsp oyster sauce, 1 tbsp fish sauce, some crushed pepper. Process everything into a paste.
    • Place the filling into the wonton, add some egg white and fold it into triangle. Remember to add a very thin layer of the fillings. then fry till golden brown.
    • Make the sweet and sour sauce: heat 1 tbsp vegetable oil in a frying pan, then fry 1 tbsp minced garlic until fragrant. Add the diced onion and stir-fry for about 30 secs. Then add the tomato and pineapple, stir-fry for 2-3 mins. Season with 1 tbsp fish sauce and 1 tsp sugar.
    • Dissolve 1 tsp corn starch with 1/3 cup of water, then pour into the sauce to thicken it. Adjust the seasonings to your taste. When the sauce bubbles and thickens, turn off the heat. Add some chopped green onion or cilantro for garnish.
    • Place the fried wonton on a plate, then pour the sweet sour and colorful sauce all over it. Top with some green onion and some black pepper.
