Recipe: Potato and Pork Rip Soup - Canh khoai tây sườn non

  • Yield: 4 Servings

  • Parboil the bones to remove all the impurities. Dump out the whole pot and wash the bones and the pot clean.
  • Season the pork spare ribs with 1 tsp minced shallots (or white parts of spring onion), 1 tbsp fish sauce and some pepper. Give it a good mix and set aside for 15 mins.
  • Heat a pot on medium heat and add 1 tbsp vegetable oil and fry some minced shallots until fragrant. Then toss in the ribs. Stir fry for about 1-2 mins, and then add in 3 cups of water (750ml). Bring it to a boil.
  • After cooking the bones for 15 mins, add in the carrots and the potatoes. Continue to cook until the carrots ans potatoes are soft. Finally, add in the fish sauce and pepper mix. Bring it to a boil again.
  • Crush 1 shallot with 1/2 tsp salt, some pepper and 1/2 tbsp fish sauce. Add this to the soup pot before serving so it will add some natural sweetness to the soup and also give it a nice aroma.
  • Transfer to a serving bowl. The soup has natural sweetness form the pork spare ribs, the shallots, potatoes and carrots. Yummy.
