Recipe: Garlic Chive Dumplings - Bánh hẹ

  • In a large mixing bowl, mix together the tapioca starch, the rice flour, and 1/2 tsp salt. Mix well, then make a well in the center, pour 175ml boiling hot water into the well.
  • Stir the with a spatula and let it cool down a little bit. Use your hand to knead into a dough. Cover the dough with plastic wrap and let it rest for 30 mins.
  • Prepare the fillings: mix the garlic chives with 100g minced meat. Season with some minced garlic, salt, pepper, 1 tsp chicken stock, and 1/2 tsp sugar. Mix well and set aside for 15 mins.
  • Take out the dough and roll into a long stick. Divide into 4 equal portions. Flour the working surface and roll down each piece into the thickness of 2mm.
  • Place 1/4 of the fillings into the center. Fold in the sides and pinch the edges together to seal. Shape the dumpling into a flat and round shape. Repeat with the rest till finish.
  • Place the dumplings into a steamer basket lined with a piece of banana leaf or parchment paper, leaving some space between dumplings. Steam for 20 mins until you can see through the green color of the chives. Take them out and leave for 15-20 mins to cool.
  • In a non-stick pan over medium heat, add 1 tsp vegetable oil and a few drops of sesame oil. Pan- fry the dumplings until golden brown on both sides.
  • Serve with a Chinese style dipping sauce (a mix of thick soy sauce and some black vinegar) or Vietnamese style dipping sauce (1 sugar : 1 fish sauce : 3 water : some garlic and chili)
