Recipe: Crab Meat and Glass Noodle Stir-fry - Miến xào cua

  • Yield: 4 Servings

  • Season the crab meat with some cracked pepper, 1/2 tsp chicken stock, 1 tsp fish sauce. Mix well and set aside for 15 mins.
  • In a wok, heat 1 tbsp vegetable oil and fry some minced garlic until fragrant and turn quite golden. Then toss in the seasoned crab meat and stir-fry for about 30 secs so the seasonings can absorb into the crab meat.
  • Now add the carrots, onion, woodear mushrooms and stir-fry for 1 min before adding the bean sprouts and Chinese celery. Gently stir for about 30 secs and season to your taste.
  • Make some room in the center of the wok, add 1 tsp vegetable oil and then toss in the soaked glass noodles. Gently stir everything up under medium high heat until the noodles turn quite translucent.
  • Transfer to a serving plate and garnish with some yellow omelette strips, some pepper, coriander and chili slices on top.
