Clear Fruit Jelly Balls with Avocado Pudding- Chè bơ thạch pha lê

Clear Fruit Jelly Balls w/ Avocado Pudding is a special dessert that is getting more and more popular in Vietnam recently.

  • Mix 1 ½ tsp gelatin powder with 2 tbsp water. Stir and leave to bloom. You can also use 2 gelatin leaves, soak in water for about 10 minutes.
  • In a saucepan, combine 100ml fresh milk, 50ml coconut milk, 2 tbsp sweetened condensed milk and the gelatin mix. Bring to a simmer. Then add the avocado puree and turn off heat. Pour into ramekins and chill 4 hours in the refrigerator.
  • To make the fruit balls, cut fruit of your choice into small dices. . You can use other fruits for other colors like mango or peach for yellow, strawberry for red, kiwi for green etc. You can also use cheese. Just dice up and fill in the mold.
  • Mix 1 tsp jelly powder with sugar and add 1 cup water. Bring to a boil and turn off heat. Pour the mixture into the mold to fill the holes and until it reaches about half of the side of the mold. Cover with the other half of the mold. You will see some mixture spilling out of the top. Let cool and chill 4 hours in the fridge.
  • To make the sauce, mix 100ml coconut milk with 5 tbsp sweetened condensed milk and bring to a simmer. Let cool
  • Run a knife or a spoon handle along the edges of the ramekin. You can dip the ramekin in hot water to loosen it out a little. Unmold the avocado pudding onto a serving bowl. Arrange the fruit jelly balls around. Add the coconut sauce and garnish with a pretty sprig of mint
