Recipe: Beef Tendon and Green Fruit Salad- Gỏi Gân Bò Hoa Quả Xanh

Beef Tendon and Green Fruit is one of the most delicious salads in Vietnam. It is particularly popular with Vietnamese men as a great appetizer to be served with beer on weekends.

  • Firstly, wash the beef tendon and parboil it for about 10 minutes with some salt and vinegar to clean the strong smell. Then dump out the whole pot and transfer the tendon into to a pressure cooker.
  • Next, grill some ginger, star anise and cinnamon until fragrant and add to the pot together with 1 tsp of salt . Hold the pressure cooker and let it cook for about 20-25 minutes until tender. Then transfer the beef tendon into a bowl of ice water to maintain crunchy texture.
  • Soak the green fruits into salt water to preventing them from turing dark and keep flavor.
  • To make the salad dressing, you need 2 tbsp of sugar, fish sauce and 1 tbsp of vinegar . Then add minced garlic, ginger and lemongrass and some chilli flakes to make extra spicy. Give it a good stir.
  • Cut the beef tendon into the same size as fruits . In a large salad mixing bowl, add all the beef tendon then mix it with about 1 tbsp of the fragrant dressing. Toss well Then add the green fruits and more of the dressing and continue tossing.
  • Finally, add some herbs, sprinkle the herbs well and toss again. Transfer into your serving plate and enjoy.
