A very easy yet tasty chicken recipe that everyone can make.

  • Use a meat tenderizer/fork/paring knife to poke on the chicken. This helps the marinade go deeper into the meat.
  • In a ziplock bag, combine minced spring onion (white part only), garlic, five-spice powder, soy sauce, sugar, salt, pepper and stir well. Insert the chicken pieces into the bag and shake well to coat the chicken with the marinade. Let marinate at least 1 hour or overnight in the refrigerator.
  • Preheat the oven to 180°C / 375°F. Remove the chicken from the ziplock bag and place on a baking pan lined with aluminum foil (skin side facing down). Bake for 20 mins at 180°C / 375°F.
  • To make scallion oil, place the chopped spring onion in a small bowl, add salt, sugar and vegetable oil. Then microwave for 10-20 seconds.
  • Mix honey with vinegar. After baking chicken for 20 minutes, flip it over and brush the honey vinegar mixture all over the skin.
  • Serve with hot steamed rice, cucumber & tomato slices.

Helen, I just made this chicken recipe of yours. Like you said, the aroma was amazing. I manage to photograph it as soon as it came out from the oven. I use whole chicken and adjust the amount of ingredients. I am ordering your book from Amazon. Can not wait to cook from it. I am totally in love with Vietnamese food. Here is my Ga Ro-Ti 🙂

The book says preheat for 375 then roasted at 356 degrees… I’m confused. Am I suppose to bake 375 or use the convert roast option and roast for 356???
