Gà kho gừng - Ginger Chicken

    A very simple and easy dish to serve in a daily Vietnamese meal with hot steamed rice.

    • In a large mixing bowl, combine chicken, ginger, garlic, shallot, salt, sugar, chicken stock, fish sauce and pepper. Mix well and leave to marinate for at least 30 minutes.
    • In a large saucepan or a wok, heat 1 tbsp vegetable oil and sprinkle 2 tbsp sugar over the base. Melt the sugar under medium heat until it turns dark amber. Quickly add the marinated chicken and stir-fry on high heat until chicken is no longer pink (about 5 minutes).
    • Then add water/chicken broth/coconut juice/coconut soda. Bring to a boil and skim off the foam and some of the floating fat. Lower heat to medium and cook for 30 minutes, uncovered, until the sauce reduces by one third.
    • Serve with hot steamed rice.

    This was delicious! I followed the recipe exactly as written. I might have to heat the oil and sugar on a lower temp next time because it burned as soon as I put in the oil and sugar into the pot on medium temperature. I didn’t have shallots or garlic either so I used the fried onions and it was still good. Overall, even though the sauce tasted burnt, the chicken was moist and delicious. Now I don’t have to bother my mom about cooking this for me! Cảm on bạn nhiều! ?
