Mứt dẻo - Vietnamese Fruit Jam

    • Blanch julienned ginger and mandarin skin for 30 seconds to remove the spiciness and bitterness.
    • In a large microwavable bowl, mix together the sugar, sliced pinapple, blanched ginger and mandarin skin. Set aside to marinate for 30 minutes.
    • Divide the fruit mixture into 1 cup portions. Microwave each batch for 10 minutes on medium heat, uncovered. Take out, add lime juice and mix well. Then microwave for another 10 minutes. Take out and mix well. Repeat until all the juice evaporates and the jam thickens and turns amber.
