Recipe: Sweet Sou Pork Ribs - Sườn Xào Chua Ngọt

    • Boil the bones for about 5mins to remove the impuritíe. Then dump out the whole pot and wash the bones clean.
    • Insert the bones into a plastic bag or a ziplock bag. Season with 1 tsp minced shallot, 1 tbsp soy sauce, 1/4 tsp salt, and some pepper. Give it a good shake and set aside for 5 mins. Also add 3 tbsp tapioca starch/corn starch/potato starch. Shake well.
    • Cut the bell pepper, pineapple and onion into square pieces about 1 inch. Cut the pineapple into slices.
    • Heat a generous amount vegetable oil in a pan, then lower the heat to medium and start frying the pork ribs till golden brown. Remove and place them on paper towel.
    • Make the sauce: Mix 3 tbsp tomato sauce/tomato ketchup, 3 tbsp vinegar, 1 tsp tapioca/corn starch, 3 tbsp sugar, 2 tbsp soy sauce, 1 tbsp oyster sauce. Give it a good stir.
    • Heat some vegetable oil in a pan and fry 1 tsp minced garlic and 1/2 tsp minced ginger until fragrant. Add the vegetables. Stir-fry for 2 mins, then add in the sauce. Cook for about 30 secs, then add in the fried pork ribs.
    • Transfer to a serving plate and garnish with some coriander.
