Nui Xào Bò - Vietnamese Style Pasta

Nui is the Vietnamese word for macaroni, xao means to stir-fry and Bo means beef. So it's basically stir-fried macaroni with beef. Nui was introduced to VN by the French as the word Nui is derived from a French word nouille. If you buy a Nui package in Vietnam, it tastes slightly different than the Italian pasta you can buy in the West as they do add some sort of rice flour in making the pasta dough. Anyway, this recipe works for whatever kind of macaroni you can get.

  • Marinate the beef with pepper, sugar, chicken stock (1/2 tsp each), minced garlic, soy sauce, vegetable oil and tapioca starch. Mix well and set aside for 15 minutes.

  • Cook the macaroni with 1 tsp salt. Cooking time should be 1-2 minutes shorter than instructed in the package. Then drain and mix with some vegetable oil to avoid sticking.

  • Heat 2 tbsp vegetable oil in the pan and fry the white part spring onion till fragant. Add the beef and stir-fry on high heat till no longer pink. Transfer to a bowl and set aside.

  • Add some more oil and the cooked macaroni to the pan. On very low hear, add tomato paste, and season the macaroni with salt, sugar, chicken stock, soy sauce and oyster sauce. Stir-fry for 1-2 minutes. Turn the heat to high and add onion. Stir-fry till translucent. Then add tomato and the beef. Cook for 1-2 more minutes.

  • Serve with a side bowl of chili soy sauce and some cucumber, lettuce or tomato slices.
