Lotus Seed and Longan Sweet Soup-Chè hạt sen nhãn lồng

This is a very elegant and imperial dessert that used to be served to the Emperors in Hue – the ancient capital of Vietnam. The making this sweet soup shows off the patience and ingenuity of the Vietnamese women

  • Firstly cook the lotus seeds with 1.5 cups (360ml) water. Bring to a boil, then cook on medium low for 15 minutes or until the lotus seeds is really tender but still in shape. Add rock sugar to the soup and simmer on low for 7 minutes.
  • Peel and remove the seeds of the longans. Carefully remove the seed so that the flesh stays in whole and do not tear Then soak in a bowl of ice water to keep them crunchy.
  • After simmering in sugar, the lotus seeds shrink a little and turn more golden in color. Add 2 cups water and bring back to a boil
  • Into the blender go the flesh of 5 longans together with 200ml water. Blend till smooth. Then strain to extract the longan juice and add to the soup.
  • Take off heat. Take one lotus seed and insert into the longan to replace its seed. Repeat till finish.
  • Add a pinch of salt and some vanilla


  • Traditionally, jasmine flower is added on top to bring a tender aroma to the elegant sweet soup.

  • It can be served hot or chilled. You can also add some crushed rice and it would feel really cool going down your throat.
    Món này ăn nóng hay lạnh đều ngon. Khi ăn thấy mát lạnh cổ họng, cùi nhãn giòn ngọt, cắn vào hạt sen bùi bùi. Chè ngọt mát và rất thơm.
